A Perfect Weekend Apple Coffee Cake Recipe!
I save Saturday mornings for baking. Don't ask me why, but there's something about the smell of a cake baking in the oven that really appeals to me. So I usually get up early, whip something up (keep in mind that my motto is EASY), pop it in the oven and then head out to the garden for some early morning bonding with my plants.
Today, I'm baking an Apple Coffee Cake that I found on the food blog everybodylikessandwiches. I'm a huge fan of this blog and via this page I ran across Jessica from smalltimecooks who contributed a picture of the finished product.

Apple Coffee Cake Recipe
Ingredients for the Cake:
- 1 1/2 c flour
- 2 1/4 t baking powder
- 1/2 c brown sugar
- 1/2 t salt
- 1/2 t cinnamon
- 1 egg
- 1/2 c milk
- 1/2 c canola oil
- 1 Granny Smith apple, chopped
- 1/2 c brown sugar
- 1/4 c flour
- 2 T butter
- 1/2 t cinnamon
- 1/4 c walnuts
1. Preheat oven to 400° F
2. Butter and flour an 8" round cake pan, shaking off any excess flour.
3. Prepare crumb topping in a medium-sized bowl, crumbling mixtures with your fingers until it looks like crumbs. Set aside.
4. In a large bowl, mix together dry ingredients.
5. In a smaller bowl, combine egg, milk and oil.
6. Add the wet to the dry and mix.
7. Add in apples and stir until combined.
8. Pour batter into prepared pan and top with crumb mixture.
9. Bake for 25-30 minutes or until a knife inserted in the centre comes out clean.
Let cool. Serve up and enjoy!
